How do I populate a user defined email field I created in outlook?

I want to create a user defined field that I can populate with text to
identify the subject of the email without overwriting the original subject
line. So for e.g. a email may be "tagged" by me after I have recevived it as
subject1, subject2, issue1 ...

I realise I could just put them in different folders but I'd rather do it by
creating another field if this is possible?
