How do I print in black ink, not color?

I used to have a choice every time I printed whether I wanted to print with
black ink or standard color. Now I 'm not given the option to just print in
black. I'm using Mac OSX and an Epson 5400. thanks.

That's a printer driver issue. Try contacting Epson's tech support website.
