How do I remove fax numbers from address book?

Whenever I hit the "To:" button in a new email, it displays not only all the
emails I have in my Contacts (which I want), but also, oddly, all the fax
numbers as well, but inconveniently listed with just the same person's name.

First, why?? Second, and more importantly, how can I stop this?

I've tried cruising through all the properties and options dialogues to
de-select this, but I can't seem to find them. Again, why?

Please help me with this frustrating aspect. My only recourse now seems to
be deleting all fax numbers, which limits the capacity of my Contacts.

Why? Because fax numbers are valid electronic addresses.
Asked and answered here countless times.
The standard behavior for the Outlook Address book is to display all
electronic addresses (both fax and e-mail). That behavior cannot be changed.
The only way to prevent the display of fax numbers is to store them in a
different field or to disguise them (e.g., precede them with an alpha
character) so that Outlook won't recognize them as phone numbers.
There are also a number of utilities available that can do this for you
