How do I remove the attachment box in the email heading

Change your Mail format (Tools-Options-Mail Format) to Rich Text.
Just be aware that if you send attachments to people who do NOT use Outlook,
using Rich text, that they will NOT be able to see or open the attachment.

Then you'll have to change your message format to RTF.
However, I would not recommend this if this is for communication outside
your internal organization as RTF then usually gets converted back to HTML
or Plain Text format and attachments could get dropped.
