"Want to use". Use for WHAT? Receiving e-mails? Sending e-mails?

The default e-mail account has nothing to do for RECEIVING e-mails. If
you still have the old accounts defined then Outlook will yank new
e-mails that arrive in those old accounts. If you deleted the old
accounts then they don't exist in Outlook, and undefined accounts cannot
be polled by any e-mail client.

The default e-mail account only applies when SENDING e-mails, and only
when they are not replies (which default to using the same e-mail
account through which the original e-mail was received). When sending
an e-mail and you want to use an account different than the default one
(or the one through when the e-mail was received to which you are
replying), use the Accounts toolbar button to select an account.
