How do I reset the categories and colors in my Outlook 2007 back to the
default?

Start | Run
Enter outlook.exe /cleancategories (note the space before the "/")
OK

Keep in mind, this will reset the categories list, meaning custom categories
you created or previous categories from a previous version of Outlook will
be removed.
