How do I restore the Normal file in Outlook.

When I 'Reply' to an email message, I keep getting the last Word document I
created placed over the message I am replying to. I have been deleting the
text of the old document and then typing in my responses.
Word is my email editor.

open OUTLOOK | TOOLS | OPTION | PREFERENCES | EMAIL OPTION
there you could make your decision

There is no Preferences tab under Tools>Options in Outlook, at least for OL
2003.

<WHACK!> That's the sound of me hitting my forehead with the palm of my
hand! Of _course_ there's a Preferences tab. It's the first tab on the
Options page. Duh!
