How do I retreive a delted account from M. Office?

I went to tools->account-> and clicked mail tab and there was 3 accounts.

I deleted 2 accounts but I noticed that I also erased some important
documents!!!

How do I retreive these deleted documents/emails which were in numerous
folders?

I keep sending emails but appear under the previous employee's name.

How do I change that?

Please help!!!
