How do i set "do not archive" for a note?

Right click for a note doesn't bring up the option of "properties", like it
does for an email. Is there a way to set "do not archive" for a note?

Change your view to a table view like "By Category".
Then add the column "Do not AutoArchive" to that view.
You'll now see a list of checkboxes indicating if the item is marked for
archiving or not.
To actually be able to use this checkboxes directly, you'll need to set your
view to allow in-cell editing.
