How do I set the language used to reply to an e-mail?

My default language is English – New Zealand.
I use Outlook 2002 and 2003 on different computers and have the same problem
on both.
I use MS Word as the editor for e-mail messages.
The language chosen for normal.dot and email.dot is English – New Zealand.
However whenever I reply to someone else’s e-mail the language of the reply
is English – US. This is an issue because of spelling differences.
Every time I find I have to change the language of the e-mail before I start
to reply to it.

I have spent hours trying different things and discovered one interesting
fact: If I open email.dot using Word and change the font of the normal style
to a different size and also change the language of the normal style to
English – New Zealand and then save email.dot. When I open it again the
normal style has changed but the language has not (it is still English – US).
In other words the change in font “stuck†but the change in language did not.

Please tell me what to do to ensure that the language of the reply to all
e-mails is English – New Zealand and not English – US.

Thank you for your help. I have spent many hours researching this and trying
different things and would love to find the answer.
