Probably not appropriate to manage an "issue log" in Microsoft Project.
Microsoft Project is a tool which computes project plans and assists in
managing the information about those projects. What you might want to
do is create "projects" for each of the issues, and create project tasks
to do things to fix the issues. Unless the activities to resolve these
issues are "big enough", you'll probably find it too much overhead in
doing even that. I guess my best advice is that you do your planning
for the overall IT project(s), that causes these issues, in Project, and
include scope in the plan to do issue management.
