How do I set up my calendar day to start at 7:00a.m.?

My day starts at 7:00a.m., but when I click on my calendar and choose just
the day to be displayed, it starts at 12:00a.m. So therefore, I can't see my
schedule unless I always scroll down to the 7:00a.m. time slot.

What version of Outlook? Have you checked Tools | Options | Calendar

Try:

Tools, Options, Calendar options in Preferences tab, change start time to
7am, click ok. When you go back into your calendar it should display the
start and finish times selected.
