How do I set up the tool of Document Imagin in Office 2007?

I used Office 2003 before, it had tool of document imaging but now Office
2007 can not find it. How do I set up the tool of Document Imagin in Office
2007?

You have to install it. Control Panel | Add/Remove Programs (Or
"Programs and Features" in Vista). Find Office 2007 and click Change |
Add or Remove Features | Office Tools...

I ran through the install, the driver now shows up in the print menu but not
under Office Tools from the start menu. I would like it to be my default
scanner program. How can I do that?

What should show up in Microsoft Office, Tools in the Start Menu is Office
Document Imaging and Office Document Scanning not the Office Document Image
Writer. Have you tried a restart of Windows or a Office Repair to see if
that helps?

If by default scanner program are you referring to the program associated
with the Scan button on the scanner? If you are, that relationship is
determined by the scanner driver. Suggest you check your scanner
documentation or scanner support. If you are using Vista, the Vista scanner
drivers may or may not support the scan button on your scanner.
