Is there not a way to have the "To" field simply read "Undisclosed
Recipients?"

You may be able to create a dummy contact called "undisclosed recipients'
with a fake email addy in your contacts, and put that in the TO field. But
normally it's just fine to put your own email address in the TO field and
use BCC for all others.

Outlook, unlike OE, doesn't automatically insert 'undisclosed recipients' in
the TO field when sending mail to only BCC'd recipients.
