How do I set Word as the Signature editor.

Tools/Options/Mail Format has an option to use "Word to edit emails" and I
have tried that but in Signatures editing I click on "Advanced Edit..." and
it brings up Notepad.

That is because the Advanced Edit... button opens your default HTML editor
configured in Windows.
To change that use Control Panel-> Internet Options-> tab Programs

OK - I'm using this on a server with Outlook 2003 and no HTML editor.

However I do know HTML fairly well so if I set up a signature in HTML using
fonts, images etc I can copy and paste into notepad and when closed it will
store the Sig as HTML. Right?

When I copy and paste do I copy ALL the tags or ALL OF BODY or just WITHIN
BODY (leaving out the body tag)?

Also can I embed an image (logo) into the signature rather than it's URI.
Same question applies to embedding an image into the body of an email.
