How do I stop a prompt to install Outlook 2003 with mail I send?

[Lost in Outlook]

Everytime I send mail from Outlook 2003 the person that receives my mail is
prompted to install Outlook 2003 - they use Outlook Express as their email
and are not interested in 2003 - they are getting annoyed with my mail - how
do I stop these prompts?
