How do I switch languages in Word for Mac

I thought I had managed to permanently change the default language in my
Spell check from English (US) to English (UK); apparently not.
Can you explain to me how I might be able to do that?

Go to Tools>Languages, select English (UK) and then click on the Default
button in the lower left corner. If that doesn't work, post back!

I have the same problem. Even though I click on default to change to English from French, it doesn't work. I go back to tools, language, and it's still in French.
