how do i track in & out bound pallet movements

Hi,
I have been tasked with the following data tracking project.
To account for:
All in bound pallets by qty rec'd
All outbound pallet by qty shipped
All returns pallets by qty rec'd
Collate all the above data & produce a KPI report which
would detail hours worked by x number of employees vthe number of pallet
movements.
Any suggestion gratefully rec'd ( Can use Excel , but am a novice in Access )
