How do I use the ampersan symbol in the header title?

I am trying to set up my custom header, in which the title includes an
ampersan symbol. I type it, but when I preview it the ampersan is no longer
visible. What do I need to do to keep it in the title?

Type TWO ampersands like && instead of only one

Use two & to show one

This will show first & second if you enter
first && second
