mcafee (my security software) prevents me from sending a Word doc as an email
attachment.

Then I would suggest you check into using the McAfee software to determine
what settings need to be changed *there* in order to prevent it from
interfering. There's nothing in Word that will override the settings of it,
your email software or [if involved] Exchange Server.

Try renaming the document you want to send, McAfee doesn't like some file
