How do I view menu options without clicking on the tool bar?

I have microsoft office 2007. In prior verions I could see the menu options
by pointing at the menu option. Now, in order to see the menu bar options,
for example the information under Home, Insert, or Page Layout, I have to
actually click on the menu option. How do I get the machine to show the
options when I point at the menu option?

I do not want to show the "ribbon" (list) of options, that uses too much of
the screen.

You can't have it both ways - the menu items display when the mouse is on the Ribbon item and the Ribbon is on. With only the menu titles showing, you have to click on the menu title.
