how do i write in chinese

i am running office 2007 on vista in english. i need to be able to compose in
chinese and read files in chinese (both traditional and simplified) without
changing the basic operating system language. in xp this was extremely easy
but i can't seem to do this now. help or suggestions from anyone would be
appreciated...
