How do I know if the people see my email address when I send

They can look at the "From:" line and see your address.

How do I know if the people see my email address when I send

They'll see whatever you've included in the "Your Name" field of the account
properties and, depending on the client they use, possibly what's included
in the "E-mail Address" field of the account properties.
