How do we get it to stop looking for an exchange server

When I start up outlook it tries to look for an exchange
server that no longer exists. How do I get it to stop
doing that?

Remove the Exchange transport from your profile. Since you didn't mention
what version of Outlook here are some possible steps...

Outlook 97 - 2000
* Start Outlook
* Select Tools | Services
* Highlight MS Exchange
* Select Remove
* Restart Outlook

Outlook 2002/2003
* Start Outlook
* Select Tools | Email Accounts
* View/Change accounts
* Highlight MS Exchange
* Select Remove
* Restart Outlook
