I tried to use a command key for em dash and got a strange cursor symbol.
Then, when I tried to Insert symbol instead, the option to Insert symbol
disappeard from the Insert menu choices. Help!!!!

Ctrl+Alt+Dash turns on the "remove next item" command. So, it zapped what
you clicked on next.

There are several ways to get it back.

1. Major draconian would be to delete Normal.dot.

2. Less draconian, is to reset your menu.

Assuming you're using Word 2003 or earlier, try Tools - Customize - Toolbars
tab. Click on Menu Bar, then click Reset.

3. If you have menu customizations you need to retain, then choose Tools -
Customize - Commands. Set Categories to All Commands. Under Commands, find
InsertSymbol, and drag it to the Insert menu... it will pop open; drop it
where it used to reside.

PS... there are several types of long dashes--em dash and en dash.

Em dash -- Alt+Ctrl+Minus sign on the number pad

En dash -- Ctrl+Minus sign on the number pad

You can also use AutoCorrect to automatically change -- into a long dash.

I have my autocorrect set to take - - and make it a long dash.

You don't say what your application is, but in Word 2007 one simply types
two successive hyphens and Word interprets it as an em-dash. You can also
use the "symbol" menu on the insert tab to insert an em-dash (and a plethora
of other symbols - far quicker than opening the character map).
