How do you remove attachments from recieved emails?

I recieve emails with large attachments. I can save the attachments, but I
want to retain the email without the original attachment.

There are a number of utilities available at www.slipstick.com for dealing
with attachments, I've used the mapi labs one

You can open the e-mail, right click the atachment, choose Remove.

Select the e-mail. Double-click on it to open it is own window.
Right-click on the attachment and select Remove. However, your message
store (PST file) probably won't reduce in size until you compact it.

If you want Outlook to automatically extract attachments (save to a
predefined holding folder and then delete from the e-mail), you'll want
to get an add-on, like:
