How is the Outlook.pst file relocated to a different directory?

I created a different location for the Outlook.pst file to protect it from
possible OS failures and reinstallations. It is on a different partition.
However I can't get Outlook to use it as the default. I've gone the
Tools>Options>Mail Setup tab>Data Files route. This creates the new location
but requires me to make it the default, a condition that is not defined in
Help, but nevertheless implies this is possible.

If I try to delete the default folder created by Outlook during installation
it deletes both the default and the alternate location I specified. So I'm
unable to access through Outlook. If I restore through the Recycle bin there
is only one folder, but after restoration the Outlook.pst file appears in
both the default location and the one I specified.

This has me stumped, and I would sure appreciate an accurate method of
placing the Outlook.pst file where I want it, and only in that location as
the default.

Close Outlook
Find the pst
Move it to the location you prefer
open outlook
when it whines, point it to the new location.
