how the format of the message body has any affect on attachments to the message

I'm curious how the format of the message body has any
affect on attachments to the message? I understand that
when the message format is RTF some recipients' email
clients will show the (example) Word .doc as a .dat BUT
if the format is in reliable Plain Text format, can the
recipient read the attached Word .doc providing he or she
has Microsoft Word on his/her local drive?
