How to choose a program that will open ".dat" files?

I scanned documents using a HP PSC 2350 series all-in-one.
Once the documents were scanned, I saved them and want to send them as
attachment to an e-mail recipient.
The file has a ".dat" ending and I don't know which program to use to open
the file in a readable format. Please help!

Even though I did not find the ending .dat, I wrote an e-mail and hope the
