I would like to take individual folders from my mailbox, copy them to cd for
back up purposes, and then delete the individual file from my hard drive.
Anyone have a clue how to do this?

Okay. Select the folder. From the menu, choose File-->Import and export,
Next. Choose Personal Folder File, Next. Make sure your folder is still
selected, Next. Give it a meaningful name and export it to a location on
your PC. Do each folder the same way, giving a different name for each one.
Then copy/burn all those files to CD. Then come back to Outlook, right-click
the folders you exported, and delete them.

NEVER import/export a .pst file - use the copy option to make a copy for
installation in another installation of Outlook. (Ensure Outlook is closed
completely beforehand.)

Otherwise, use the Personal Folders Backup available from Microsoft Office
Downloads to backup your file at pre-determined intervals.

After furious head scratching, Anne Troy asked:

His question said "individual mailbox folders". :)
I often create individual folders for my projects. I just move them to
another folder when I'm done. I'm assuming he wants to back them up
separately instead. Do you think I misunderstood?
