How to create new category of Drawing Type

I would like to add custom templates to the list that displays when you click
on file, new. There are many standard templates listed that comes with Visio
but I want to have a folder or category for my company and have our templates
in the drop down.
How do I do that?

Go to Tools > Options > Advanced > File Paths and add a folder to the
Templates field. There is also a publishing tool in the Visio SDK for
registering new templates with Visio.

Continuing on from Mark...

You would then place your template(s) in the new folder. To get your
template to show in the selection with a sample diagram. You need to create
a sample drawing in your template and let Visio create the preview drawing.
To have the preview and an empty template, change the setting so that Visio
does not update the preview and then delete the sample drawing. Remember to
do this on a copy of the template, so you would still have the original to
be able to modify the sample drawing in the future.
