Why do you want your recipients of your e-mails to not know who sent
them those e-mails? Changing the From header won't alter the Received
headers that track from where an e-mail was sent, or the Message-ID
assigned by your e-mail provider for your e-mails sent through them to
allow tracking who sent an e-mail.
