how to postdate a letter

I have been trying to put a future date on a letter and I am allowed to
change the date and save it, but as soon as I print it todays date appears
and that is what is printing. Can someone tell me how to do this?

In Word 2007 and Word versions as far back as I can recall, when you Insert
Date there is a bock at the bottom to automatically update. Ensure that box
is not checked.
