How to put '&' sign in header text ???

When try to type '&' sign in Excel-2003 header text it doesnt show in the
'print view'.
Does it need to be inserted as a symbol, and if so, how can a symbol be
inserted into header text ?
Questions, ideas, etc ?

Double it. This && That prints as This & That.

More precisely, it shows up that way i Print Preview. I didn't waste
a sheet of paper to print it. :)

Please don't use a "-- " signature delimiter if you insist on putting
your text above the material that you quote.

The reply text box seems to be set up for 'top posting' with previous posts
below the top of the text box... not necessarily a preference of mine.
The '--' comes in automatically.
The '----' is by me to separate the 2 parts of the signature.
What are my other options to achieve similar (maybe dots instead of dashes,
or some other symbol) ?
