You cannot configure Outlook to show only the working hours. It will always
show all 24 hours in a day, but it will do two things: first, it will color
your working hours more brightly than your non-working hours so that you can
see them more clearly. Second, it will put your starting time at the very top
of the Day and week views. You can scroll earlier and later, but the starting
point of the view will be what you want.

How much of your working day shows in the scroll region is dependent on your
window size, the screen resolution, and the time scale you have selected for
the calendar. Lengthen the time scale and the time slots will cover more
time, causing more time to display in the scrolling region. With one-half
hour time slots and a screen resolution of 1280x1024, my Day or Week view show
from 7:30 AM until 10:30 PM using the window size I've configured.

if you don't need the hours at all, you can try a 2 week view -

otherwise, how many hours you see is dependant on the time scale and window
size.
