With your selection highlighted, hold the shift key down and use the arrow
keys to decrease selection.

Hold down the CTRL key as you select or deselect cells one at a time. This
is also the way to select cells which are not contiguous.

I just did. I'm using Excel 2000. Is it possible it behaves differently than
later versions?

lmao, Excel 2007 missed some of the simplest things, hahahaha, you need an
add-in to deselect cells. I am having the same problem.
