I book a theatre with several events that run simultaineously in different
venues. We book down to the minute. I would like to use something in MS
Office to look at everything I have going on, and be able to share it
effectively.

All depends on how computer literate you are. Given that you are asking
the question, I'm assuming that you don't have that much computer
expertise already.

You could use Word, PowerPoint, Excel, or Access. I can't see how the
other Office apps would be useful. "Out of the box", none of these are
going to provide you much more capability than a blank sheet of paper.

You may wish to use Access ... but then you'd have to made some
databaswes, forms, queries, etc.

You may be tempted to use Microsoft Project ... but Project is for doing
computations associated with projects. Scheduling theatres doesn't sound
like a Project to me.

I think you'll want some sort of bespoke scheduling application
developed, or find something offered for free 'on the internet', or
available from some bespoke vendor who specialises in theatre
