I am sending an email with a picture to a new address; the address is not
recognised. How can I start an address book to add this address?

Outlook automatically recognizes SMTP addresses in (e-mail address removed) format as
valid addresses. You don't need to put the address anywhere but in the To
field of your message. But if you want to keep a record of that person and
their address permanently in Outlook, just add a new contact in your
Contacts folder.
