iis logs

Our website was hacked recently (all the pages were deleted somehow)
and right now, I'm still under the assumption that our log files are
still credible. So I'm wondering if it's possible for a hacker's IP
address and stuff not to get logged without the hacker modifying the
log files. Like what methods could he/she have used?

Appreciate the help and the feedback!
