I want mails in my inbox view in two lines, one for the sender, and one for
the subject.

Example:
John Smith
New Accounts

I am not being able to see this, instead I am seeing:
John Smith - New Accounts

Which is the correct view for what I want?

I don't think you can. Those headings are Fields, and you can't have
them under each other AFAIK

It's a view setting for Outlook 2003 and Outlook 2007;
View-> Arrange By-> Custom-> Other Settings-> disable "Use compact layout in
widths smaller than xx characters"
enable "Always use compact layout"

What will show up where depends on how you've sorted your columns and which
width you have assigned to them.
