Include CC field value when emailing form?

Hi,
We have a form that is emailed to a public folder via a data connection.
Users would like to ability to add a cc a person when the submit button is
pressed. Anyone have an idea how this can be accomplished?

The form is used internally on our network; i.e., stored on a shared drive
and emailed when submitted (not SharePoint).

When the form is emailed the To, CC, BCC & etc fields are read only. Is it
possible to make the CC field updatable or have a field on the form that
would allow a lookup into Outlook and then include a reference to the field
when creating the data connection? Something else?
