Insert item in new message, "To" column missing

Outlook XP: I want to insert an item into a new message (menu „insert“ -
item...). The window displays the „To“ column of items in message folders,
but I’d like the „From“ column to be diplayed instead (such as in folders
„sent items“ or „outbox“).
How can I change the view?

For the Sent Items and Outbox folders, you already and always know what
the From column would contain if it were displayed. Those items were
from YOU! Displaying the From header for messages you sent would not
show you anything unique or new since they were from you. As you select
different folders, you will notice the columns change to reflect how
that folder is used. If you select the Inbox folder then you will see
the From column. If you insert a note item, there won't be a From or a
To column (because you never receive or send notes).

I've stored sent items in an archive folder (pst file) and want to see the
recipients.

That dialog is not customizable. Since it is an e-mail type folder but
not one of the special e-mail type folders (Outbox, Sent Items, Inbox),
it handles all the generic e-mail type folders like an inbox folder. So
you're stuck with the fixed dialog that Outlook presents to you. You
could submit feedback to Microsoft to submit a suggestion.

Won't the Field Chooser add the column you want?

I think the OP is asking about the browser dialog window that appears to
let you select what item to insert. That isn't customizable. The view
panes in the main interface window are customizable to let you
add/delete columns.
