Interface inconsistency

I really enjoy using the new ribbon interface; I find it intuitive and
visually pleasing. What I do not enjoy is that some applications have it and
some don't. For example Outlook uses the ribbon interface when I am writing a
new message, however Outlook's general interface doesn't use the ribbon
interface...moreover, InfoPath, OneNote and Publisher are still using the old
menu interface.
Why learn two ways of dealing with Office applications?

In the main Outlook interface the ribbon UI would just take up more screen
real estate. Your not doing any formatting, editing, etc. there so I think
it makes sense to not have it there.

In the compose mode it is useful for writing and formatting your message.

Just my humble opinion.
