Does anyone know if there is a way to manipulate/sync up with Ms Access data
and an iPhone?

There is no version of MsAccess for the iPhone. You weren't really
expecting that, right?
Closest you can get is to write a webapp to manipulate the data in an
Access db. You could access that webapp from your iPhone.
