Is it possible to change the meeting organizer?

When an admin assistant leaves the company, and a
new admin assistant is hired. The new person needs to make a changes to a
standing departmental meeting, but he/she can't, because the old admin
is the meeting organizer. What can we do for this?

Is it like deleting the old meeting and create a new one?
In that case we have to send a separate e-mail to all of the meeting
attendees asking them to physically go into their own calendars and delete
the old meeting.
Then send a new meeting request?
Is their any easier way of doing this?
