Is it possible to change the size of a powerpoint slide?

Is it possible to change the size of a powerpoint slide, for example so that
it forms a long, thin paper size. I need to do this to include a lengthy
process flow chart within my hidden slides.

Tom,

File > page setup > choose 'portrait'

I'm guessing you want to mix and match both portrait and landscape slides
within the same presentation.... if so see 'portrait and landscape' on this
page

Why would you want to do this? Most projectors are 1024 x 768, so
reformatting your page won't make any improvement unless it's to fit a
physical screen that can't receive the full 1024 x 768 or you have a
widescreen projector.
