Is there a default setting for email addresses to show name only

When creating contacts, I set the dsiplay tab for the name only (not email
address - example...Jane Doe, not [email protected]). There must be a default
setting to control this because the addresses defaault back to
[email protected] at least monthly. Does anyone know how to prevent this?
Many of my email recipients don't mind their name showing but don't want the
email address to show with the name.

It doesn't matter what's showing in the TO or CC lines of received e-mails -
whether its display name only, address only or both, a recipient can display
the address by double-clicking on the name.
