Issues and Risks Columns

I need to take of the Categories column from the issues and risks form.

But i dont see the hide or delete option anywhere on the "modify contents
page"

Is there a way where i can hide/delete the fields from the users?????

In the sharepoint config file onet.xml there is a parameter for fields
Hidden="TRUE".

If you have never changed a site using this site definition file I would
