Language keeps changing to English US

The language in Word keeps changing to English US and I want English UK.

I have I changed it in Tools/Languages but after a few clicks or opening a new document it is back to US again.

How can I stop that changing

You have to close all documents and then edit your Normal template. Set the
language, then click the Default button and say "Yes" when prompted.

The first thing you need to understand is that the "Language" is not stored
in "Word" and there is no such thing as a "Default" language.

When you start your computer, it picks up your preferred language from the
System Preferences. When you start Word, it picks up that language from the
OS. If you then change keyboards, Word may switch language.

What Word refers to as the "Default" language is actually the language of
the Normal style in your Normal template. In an unmodified default Normal
template, all styles inherit their language from the Normal style.

As soon as you begin to handle properly formatted documents, all bets are
off, because most professionals will break the chain of inheritance from
Normal style so their styles do not start mysteriously changing.

When you create a new blank document, Word creates this by copying all of
the properties, including the language, from your Normal template.
