Due to the quota limitation on the Exchange server, I have to download the mails to the local machine while reading and delete the copy on the server site at the same time. I could configure this option for POP account in "Edit Account" -> "Options". This option, however, is absent in the Exchange server configuration.

Is there any other way to configure this option? Or this has to be done from server site?

Got to Tools --> Rules... and create a new Exchange rule. For all
incoming messages use the "Move Message" command to move your messages
to a folder "On My Computer".

Hope this helps!

One of the Exchange folks will have to answer the question about setting the
server, but you can use this third party option: ($10)

For those still on Tiger you can download this free script.

AutoArchive Exchange Account to "On My Computer"

Move all e-mail older than 60 days from your Exchange account folders to
archive folders within the "On My Computer" folder tree.
